Mashed Sweet Potatoes with Citrus
1 large sweet potato (12-14 oz)
2 tbs Molly McButter
1 tsp finely grated orange zest
2 tbs fresh orange juice
¼ tsp salt
1/8 tsp nutmeg
Put oven rack in middle position and preheat oven to 425
Prick potatoes all over with a fork and bake in a small baking dish until tender when pierced with a small sharp knife, about 1 hour.
When potato is cool enough to handle, peel off skin with a knife.
Mash potato with remaining ingredients
