GRILLED VEGETABLE SALAD
INGREDIENTS
- 1 eggplant cut in half lengthwise, peeled then cut in small
cubes
- 1 onion diced
- 1 zucchini and 1 yellow squash
- 1 red and 1 yellow pepper (or any color you prefer)
- 1 cup of cherry or grape tomatoes
- 1 cup of sliced baby carrots
- 1 cup of chopped asparagus
- Cooking spray…Olive Oil
- Balsamic Vinegar
- Salt and pepper and a mixture of herbs and spices such as Dash
- 2 bags of cleaned and washed spinach
- These are suggested vegetables …you may modify to your
preferences…
(or use any other vegetables you have available!)
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C)
2. Spray baking
sheet with Cooking spray thoroughly
3. Spread all vegetables on
cooking sheet, sprinkle with salt and pepper and dash
4.
Bake in
preheated oven for 15 minutes and vegetables are tender.
5.
Wash fresh
spinach leaves and place in large salad bowl spray with Olive
oil cooking spray and toss
6.
Add warm grilled vegetables to spinach
and drizzle with Balsamic vinegar. Serve immediately.
Serves 8 to 12
